RE: EQUIPMENT REVIEW FOR THE EXPRESSO LANE
Dear Ms, Tutterrow:
34 Gth Street, Suite 3Q0
Bremerton, WA 98337
337-5235
The I<itsap Public Health District, Food and Living Environment Program, has reviewed the submitted
plans with respect to the Expresso Lane, located at 4104 Kitsap Way in Bremerton, Washington. In
accordance with the Rules and Regulations of the Washington State Retail Food Code (WAC 246-215),
and Kitsap Public Board Health Ordinance 2014-01, the following items need to be addressed:
1. Protective light shields must be installed in the front and back food preparation areas.
2. A hand wash sink must be installed.
3. A barrier must be installed in between the hand wash station and the three -compartment sink if
splash contamination may occur from one sink to the other; this barrier must be sufficient in size
to prevent splash contamination and must be cleanable.
4. Soap, paper towels, and a hand washing sign (available at the Washington State Department of
Health's website) must be available for use/posted at the hand wash sink.
5. Flooring must be non -porous, smooth, cleanable, and durable.
6. Walls must be non -porous, smooth, cleanable, and durable.
7. Grey water must be disposed of in the holding tank.
8. An indirect drain for the three -compartment sink is recommended, but not required.
Once these items have been addressed, you will need to contact this office at least five days in
advance of the intended opening, to arrange for the pre -operational inspection. At the time of the
inspection, all construction work must be completed, and all food service equipment must be installed
and operating.
Thank you for your cooperation. If I can be of any further assistance, please do not hesitate to contact
me at (360) 337-4701, or by email at Dayna.Katula@kitsappublichealth.org.

Certificate of Occupancy
All businesses within the city limits require a City
of Bremerton Business License and a Certificate of
Occupancy.
An occupancy permit may be used to change the
name of a business, change the ownership of an
existing business, or occupy existing building or
space when the business use is Group B business
office or professional service (such as a beauty
shop), or the business use is Group M retail sales
store, and the business use is the same as the
previous business use with no change in
configuration of the space. Inspections are
performed by the Building Department, Fire
Department and Water Department before the
Certificate of Occupancy is issued.
A building permit is required for occupancy of a
building or tenant space, food preparation or
service, alterations, additions, major repairs, interior
demolition, installation of storage racks, storage or
use of hazardous materials, or fabrication or
assembly of products.
The permit application, floor plan, and answers to
the questions will be evaluated during the next
scheduled staff meeting, usually the following
Wednesday morning. You will be notified your
permit is ready to issue or if staff needs more
information or corrections.
Inspections
When the occupancy permit is issued, you may start
calling for your inspections from the Building
Department, Fire Department, and Water Depart-
ment. Be sure to give your permit number, the
address, and the date you want the inspection. The
business must be available to inspect that day. A
reinspection fee may be assessed if the inspector is
at the site and cannot gain access.
Building Inspection 473-5870

Department of Community Development (DCD) to
identify the business, the type of business, and the
property address. The permit application may be

RE: APPROVAL LETTER FOR THE EXPRESSO LANE
Dear Ms. Tutterrow:
The Kitsap County Health District Food Program has reviewed the plans with respect to the food

Washington. In accordance with the Rules and Regulations of the State Board of Health for
Food Service (WAC 246-215) and the Kitsap County Board of Health Ordinance 2005-8, the
plans are approved and the facility is approved to open and operate.
Any menu changes require pre -approval from the Health District. If changes include potentially
hazardous foods, all refrigeration must maintain food at < 41 degrees Fahrenheit.
The Expresso Lane will be permitted as a TYPE "L" (Limited menu) food service
establishment. A pre -operational inspection for this facility Will be waived. Your facility will be
placed on the normal rotation for inspection and you should expect your first in the next 3045
days.
Thank you for your cooperation. If I can be of further assistance, please contact me at (360) 337-
