SUMMARY: The adoption of this ordinance will create a new chapter 15.05 in the BMC which outlines
pretreatment requirements for the discharge of Fats, Oils, and Grease by food establishments into the City's
Sanitary collection system. The ordinance is closely patterned after a model ordinance developed by a working
group of Cities and counties in the Puget Sound area.
